Benecel™ methylcellulose (MC) and Hydroxypropyl Methylcellulose (HPMC) products are high purity, water-soluble cellulose derivatives designed to perform many functions in processed foods. Their primary functional properties are: reversible hot-water gelation, water binding and retention, providing an oil barrier, thickening, suspending and stabilizing and film formation. These functions may vary depending upon the type, viscosity grade, use level, and processing conditions of the polymer.
